Blair Estate 2023 Rose of Pinot Noir

From the beginnning, this Rosé of Pinot Noir was planned and treated as a separate wine. We did not simply “bleed off” juice in the oft - used saignée method, as an afterthought to making a red wine. Instead, we employed a short, limited maceration after the fruit was destemmed. The Pinot Noir juice then soaked on its skins for 14 hours, picking up the beautiful pink hue. It was fermented in a cold stainless steel tank to lock in the color and fruit expression. It fermented completely to dryness and then was aged for six months in “neutral” French oak cooperage. 

This Blair Rosé of Pinot Noir is a serious “pink” wine. Our goal was an Old World style that would be bright and refreshing. But also one that would be a versatile companion to a wide variety of  foods. The nose and palate is full of ripe strawberry, cherry and watermelon. It finishes crisp and dry. Serve well chilled with a Salade Nicoise or an herbed  salmon steak fresh off the grill.

Blair Estate 2018 Chardonnay, Delfina's Vineyard

This Chardonnay which we simply call by it's vineyard name, "Delfina's" is unique in that every vintage will be different.  The reason for that is we use very little barrel manipulation wanting to let the particular vintage influences on the vineyard come through.  Matt gets "baked apples and pears", I get sour unripened green apples like the one that your Grandmother told you not to pick of the tree because it wasn't ripe. This unripened green apple also gives it some zing and makes it a wine that the "I don't like Chardonnay" people fall in love with.  Guess they just never tasted a great Chardonnay.  We barrel ferment and age the wine in 3 different barrels. 25% is in stainless steel barrels to keep the fruit character and acidity alive, 25% in new French Oak barrels, complete malolactic conversion, to soften the wine and give it just a touch of creaminess and mouth feel. The final 50% is fermented in old used neutral oak barrels that evaporate off water and alcohol leaving behind enhanced Chardonnay flavor.  We stir the barrels every 30 days to help build the complexity of the wine and bring out those beautiful Arroyo Seco AVA notes of apple, pear, peach, nectarine and pineapple.  Remembe every vintage will have it's own unique take on the vineyard.

Blair Estate 2018 Chardonnay, Roger Rose Vineyard

Roger Rose Vineyard is planted to Dijon clones of Chardonnay, but what clones are a mistery and the location of the different clones is irratic and follows no particular pattern.  This creates a field blend approach to the wine when it is made.  This puts all the control in the hands of the vineyard as not all clones ripen along the same path.  The wine is predominatley aged in neutral barrels that have been used so many time they depart no oak into the wine.  Our take on "unoaked" Chardonnay.

2019 Blair Estate Chardonnay "The Matriarch", Delfina's Vineyard

The Matriarch Chardonnay from Delfina's is our play on that big California style. Relying on the influence of the Arroyo Seco Ava, with its well drainded rocky and sandy soils cooled by heavy afternoon winds off of Monterey Bay, we are able to keep the wine fresh and structured.  Using 100% new French Oak barrels from Francios Frere, Seguin Moreau, Billion (Puncheon) and La Sienne Cooperages create the wine's oak along with it's browned butter and butterscotch notes.  Using 2 different size barrels, standard size (60 gallon) and Puncheons (132 gallon),  gives us the control to create a big Chardonnay that still possess balance along with layers of complexity and flavors. 100% of the wine goes through Malolactic conversion to add the buttery and creamy notes. This is one of two Chardonnays that we make from the 1.6 acres of Chardonnay grapes, 809, 95 & 96 clones, planted in Delfina's Vineyard.  Enjoy with Oysters, fresh fish, ceviche and litely grilled meats.

Delfina's Vineyard contains only 1.6 acres of chardonnay and the Chardonnay portion is a problem vineyard but the Chardonnay grapes that are produced from the 809, 95 & 96 clones are phenomenal and allow us to manipulate the making of 2 distictly differemt Chardonnay wines.  In the Delfina's Vineyard estate style we utilize 3 different barrel programs that are then blended together to give us the end result. In this style the only manipulation that we do is with barrel use, we want the wine to express that given vintages differences so the wines will never be exactly alike from year to year.   After pressing the grapes fermentation takes place in barrel with 25% of the juice being placed in new French Oak barrels, 25% in stainless steel barrels and the remaining 50% in old nuetral oak barrels.  After fermentation is complete the only potion that is put through Malolactic conversion is the 25% in new French Oak barrels.  

This is a Chardonnay that is versital enough to be consumed by itself or with food.

"A darker shade of yellow in the glass, this bottling offers tart and baked-apple aromas on the nose along with toasted nut elements. The palate is quite nutty, viscous and even oily, reminiscent of a Roussanne." Matt Kettmann

        At Blair we take our Pinot Gris seriously, it is not a Pinot Grigio.  Both wines are made from the Pinot Gris grape, which is a 17th century mutation of the Pinot Noir grape that happened in a small vineyard in Alsace France at the hand of Mother Nature.  Pinot Gris, the wine, is much more complex, with more depth and flavor than Pinot Grigio.  We ferment and age our Pinot Gris in two differnet barrels, roughly 50% is in small 50 gallon stainless steel barrels to maintain the fruit and acidity of the grape with the rest in old nuetral oak barrels to soften the harshness of the stainless steel and to allow the evaporation of 5-6 gallons of wine over the aging process. This evaporation is actually water and alcohol, and the evaporation helps to increase the natural flavor characteristics of the vintage's grape.  The most important element in the making of Pinot Gris is what is called "battonage le lees" which simply means stirring the lees which have settled at the bottom of the barrel. Lees are mostly yeast that have stolen the flavors during the fermentation process and have died and settled to the bottom, we stir the barrels to get those flavors back.  Most wineries stir every 30 to 45 days, at Blair we stir every week.  Pairs well with a multitude of dishes or simply a good Riedel glass on a hot day at the pool or a cold night next to a roaring firel.

 Attempting to showcase the interaction of different clones  within the micro-terroirs of Delfina's Vineyard is our  goal when making a 3 clone Pinot Noir. Here we have created a blend of Pinot Noir clones using equal parts DRC-943-115 to give you a Pinot with a balance of fruit, acid and tannins. Delfina's Vineyard is located on an elevated plateau between two rivers, the Salinas and the Arroyo Seco that were once one river, it is known today as "The Salinas Valley" and is a fertile vegetable farming MegaPower.  Within this valley there remains areas of cobble stone, chalk rock, rose rock, granite and sand that intersects the fertile vegetable soils to produce unique terriors.  Delfina's Vineyard has 9 unique terriors within its 8 acres and provides us the opportunity to play with different blends of clones.  This is an intense Pinot Noir yet delicate and balanced in true Delfina's Vineyard style we hope you enjoy it.

“Reserve” is a title that is thrown around pretty liberally in the wine industry, often without a whole lot of meaning. Most terms on a wine label have solid statistics or legal requirements behind them. For the wine to be called Pinot Noir, it needs to be at least 75% of that varietal. To list an official AVA like Arroyo Seco, at least 85% of the grapes have to come from within that appellation’s boundaries. But “Reserve” in the U.S. has no such definition, no required components. For the most part, it is simply a marketing moniker.

Until now. “The Reserve” is Blair Estate’s ultimate Pinot Noir. Everything about this wine is exceptional. “The Reserve” designation here has real meaning. Simply put, it is hand selected from the very best vines each vintage – held in “reserve” for special treatment and special occasions.

Here’s an excerpt from my vineyard log book from the 2018 vintage: “October 31. Walking Delfina’s, I left the refractometer behind and hand sampled for the very best grapes. Trusting my palate, I selected just enough fruit for four barrels worth of truly exceptional Pinot Noir. Clone 115 came from rows 14-16.  Rows 69 & 70 gave us Clone 777. Clone 667 came from row 43. Pommard 4 off the south block row 75 - 79. Clone 828 from row 25. Clone 943 from rows 8 - 11 and "DRC" clone from rows 18 & 20  .” These were the grapes destined for this “The Reserve” release.

Only 100 cases were produced of Blair Estate 2017 “The Reserve.” The 2017 "The Reserve has recieved 91 Points from Wine Enthusiast Magazine and a Double Gold from the 2022 Denver Interanational Wine Competition. This is the Blair family’s ultimate statement in Pinot Noir from the Arroyo Seco – clearly putting the vineyard and the appellation on the map with California’s very best PN locales.

2018 will go down in the books as the vintage that Delfina's Vineyard through me a curve ball.  The growing season was not exceptionally different, we were dry as usual with warm sunny days that were marked with our normal winds off of Monterey Bay blowing down the valley of the Salinas.  But somewhere along the vines journey they decided to produce fruit that was markedly more subtle in its flavor profiles than years past.  I am not saying that this was a bad thing but it produced a style of Pinot that is not the typical Delfina's bomb.  At first I was worried about its' acceptance by the consumer but that was not the case.  Enjoy with liter foods and pastas. 

"A light hue in the glass, this bottling is wild with tart cranberry fruit and herbaceous on the nose, offering thyme, bay leaf and rustic sage scents. The palate's cranberry and orange peal flavors are elevated by black tea and mint on the palate."     Matt Kettmann

Morgantini is a well-regarded estate that has its own unique micro-climate. Only a mile seperates our vineyards yet it is always 10 degrees warmer with very little wind. We source this Clone 115 from the north 2 rows that are located in the 2 acres of east/west rows that grow in chalk rock soils. We normaly don't appreciate single clone Pinot Noirs but make an exception here because we have found that as one travels from west to east through these two rows there are a multitude of soil changes which causes the fruit to be different every so many yards.  This is mind boggling and makes for an interesting wine from a small little unknown vineyard.  The barrel program is 25% new and 75% really old nuetral barrels.  

"Roasted tomato, rust and stewed-plum aromas arise on the nose of this bottling, which is showing its age. Seared strawberry, oregano and marjoram flavors pop with light pepper on the complex palate."  Matt Kettmann
